Tasting and food pairings
This crémant has a light golden colour with a shade of rose. Aromas of ripe apple, red fruits and orange peel on the nose. It has deep flavours of candied fruits, meringue and toasted almonds that lead to a long and rich finish. Delicate, fine bubbles on the palate.

A premium cuvée from Simonnet-Febvre, this shows the influence of the 100% Pinot Noir in both a deeper hue in the glass and red-apple fruit on the palate. With a low dosage of 6g/L and aged 24 months on lees, this is a lovely Crémant with a fine, persistent mousse and typical acidity. Showing more depth, concentration and fleshiness on the palate than some other northern Bourgogne Crémants, this has a very dry, fresh finish. Certainly makes good alternative to Champagne. Color: pale golden yellow with green reflections, fine and persistent bead of bubbles.
Nose: fine and subtle, with notes of red fruits (raspberry) and peach.
Palate: lively, mineral, supported by light acidity. Gourmet finish.
Pairing: scallop carpaccio.
Comment: a fine wine, full of elegance.
