Maison Simonnet-Febvre is today the only winery in Chablis that produces Crémant de Bourgogne. We actually make 5 different Brut cuvées. Our Crémant is fruity, elegant and fresh while Crémant "Blanc de Noir" is richer and more complex. Our vintage Crémant is aged 3 years on laths and the composition varies to offer the best of each vintage. The Brut Rosé combines delicacy and character with its aromas of little red berries. Like our vintage Crémant, our Dosage Zéro is only produced in outstanding years and is the Crémant for fine connoisseurs.
In Burgundy, the Traditional Method is subject to stricter rules than those governing the production of the most famous sparkling wine in the world. Made from the most noble grape varieties, Chardonnay and Pinot Noir, the grapes must be hand-harvested in perforated crates. The yield is very low; no more than one litre of juice can be extracted from one and a half kilograms of grapes. After fermentation the effervescence is created within the bottle during at least twenty months of ageing in our old cellars in Chablis, on laths, before disgorging and dosage.
